Description
Timaná, in southern Huila, is home to generations of smallholder farmers who grow coffee in diverse agroforestry systems, surrounded by native trees that help preserve the area’s biodiversity. Through their work with Cata Export, the community combines long-standing farming traditions with training and quality support that opens access to sustainable, global markets.
This washed Castillo lot reflects that balance of heritage and precision. After selective hand-picking, cherries are pulped and undergo 48 hours of controlled oxidation to bring clarity and complexity to the cup. The coffee is then dried slowly on raised beds to 11% moisture content, ensuring stability and structure. The result is a clean, balanced brew with light caramel sweetness, soft toffee, bright orange, and a touch of walnut — a clear expression of the Timaná community’s dedication.
